Is the Cabot Clothbound cheddar an ideal inclusion in a cheese gift hamper?
Published on 11/03/2010

The Cabot Clothbound cheddar could be a welcome addition to a gift hamper as the variety has been named cheese of the month by a website.

Philly.com. awarded the accolade to the style which has been produced via a collaboration between makers of the yellow foodstuff - the Kehler brothers - and the cheddar manufacturer Cabot.

It is wrapped in breathable cloth bandages and rubbed in lard as opposed to the usual wax and left to develop for almost a year.

The result, the website described, "is a far more artisanal creation than the typical Carbot supermarket brick".

Flavours include toffee, nuts and mushroom and a block will contain some blue veining and tiny protein crystals in the middle.

It was reported last month that Blur bassist Alex James had swapped a hectic life in the city to enjoy a more relaxed environment in the country, where he has been producing his own brand of cheese.
