Hamper fans struggling to match wine to artichoke dishes may be pleased to know good combinations are said to exist. Susy Atkins of the Daily Telegraph claims that, due to the delicate flavour of the ingredient, red wine is not advisable but, if absolutely necessary, a pinot noir would make the best selection. Ms Atkins commented that medium-bodied, well-balanced whites are the perfect accompaniment, adding that they are the "solid, reliable citizens of food and wine matching". Where salad recipes are concerned, she suggests that a Spanish bottle would be better suited: "The restrained lime, angelica and almond flavour of the verdejo grape is spot on." Chicken and artichoke courses can demand a richer, creamier glass, but Ms Atkins warned against the temptation of a tropical new-world variety. Recently championing Spanish white wine as a remedy to Christmas over-indulgence, the connoisseur praised its ability to partner simple foods including pan-fried white fish.
