An Oldham-based chocolate innovation chef will be competing against skilled chocolatiers in a bid to win a prestigious award.
John Costello, who works at Park Cake Bakeries, will battle it out against four other catering specialist's to be crowned World Chocolate Master, the Manchester Evening News reports.
He told the news provider he has always loved chocolate - which is often included in luxury Christmas hampers - and it is even turning into an obsession, as he "eats, sleeps and breathes" the sweet stuff.
"People always see the glossy side of it, the romance of being around chocolate all the time - they don't see the hard bits and the complexity," Mr Costello added.
He explained his working day is full of variety and can include looking at new beans, designing bespoke decorations or creating new flavours.
Contestants are being asked to produce a showpiece that interprets the mystery surrounding the discovery of cocoa in the South American Rainforest.
